    More adventures in Sous Vide

    Posted by Joseph Wilson in

So I just found a really really cheap vacuum sealer at B3 for under $20. What does this have to do with sous vide?  Well by definition sous vide requires whatever you're cooking to be air tight so that your main ingredient  can become infused with your marinade or seasonings that you're using. A vac sealer can achieve this. I'm going to try to make some chicken or steak next time I'm off and see how it turns out!

    Culinary Adventures

So today was my day off which really means that today was my day of cleaning house and studying.

For a while now I've been fascinated by the art of cold smoking. Basically the idea is that you take an item, fish for example, and add a little bit of smoke to enhance the flavoring. Most of the smokers I've seen have a small bowl attached to a vacuum pump of some kind. You basically throw some wood chips in the bowl, light it, and pump it into a chamber that holds whatever you are smoking.

My thought today was what if I could rig up a pump that could produce any flavor smoke that I wanted? The solution I've found is to take a hookah pipe and connect it to a vacuum pump! Because the smoke is first filtered through a liquid you could in theory produce any kind of flavor you want. Also because you use a coal and are not burning the ingredients directly, you could also use any kind of food to produce specific flavors, cucumber with melon juice for example. The application of this is very exciting. I can't wait to experiment!

    Cell Phone troubles

Hey everyone, until further notice I wont be using my cell phone.  Not only do I have a huge bill due to texting, it also keeps dying on me 15 minutes into a conversation. So yeah either use facebook or (preferably)  call my house phone (661-8768) and ask for me.  I'm hoping to get everything fixed by the 8/22  but we'll see.
